Dear, sweet merciful cheese gods, thank you for giving me Nancy’s Hudson Valley Camembert. I have never loved a cheese so much in my whole cheese-loving life. I doubt I ever will.
I have been running into Nancy's Camembert for a few years now on discerning cheese plates around Chicago, and indeed, the country. When the cheese arrives on a cheese plate, first I say a quick and silent prayers of thanks to the gods of cheese, and then I let my fellow diners know that they can have a small taste of the cheese, but I shall be taking the lion's share. I also renounce my claim to all other cheeses on the plate, so this doesn't seem grossly unfair. It is not. I am the winner in this situation. I GET THE CAMEMBERT!
The the 2-pound wheel of a lush and creamy soft-ripened cheese has a subtle nutty flavor with just enough good cheese ripened stink to make me, literally, weak in the knees when it hits my palate. Sheep's milk cheese is one of my favorites being versatile and flavorful without being overwhelming. There are so many varieties, but why try a single other one when you can have this one. I don't know. Can someone explain it to me?

Editor's Choice: American Spoon Whole Seed Mustard
Pretzels, and turkey sandwiches, and a whole leg of lamb and on brats. There are so many things in the world that I love to put mustard on. I feel it is the most versatile of the standard condiments. And of course, being a Chicago girl, I put only mustard, not ketchup and mustard on my Chicago-style hot dogs. I love a little dab on cheese plate to go with a nice cheddar or gouda. I like to eat it with my eggs in the morning, on occasion.
When American Spoon's chock-full-a mustard seed mustard came to the office, my interest was piqued. I usually go for a more blended mustard, frankly, and this seedy jar was intriguing.
Not your average yellow, this sophisticated mustard features whole yellow and black mustard seeds soaked in vinegar and Michigan sparkling wine. The seeds become plump, tender and toothsome as they’re infused with the wine’s complexity and then burst with every taste, releasing their flavor in a perfect balance of sweet and heat.
American Spoon has a variety of savory relishes and spreads, and I am dying to try some of the others like Portobello Mushroom Relish and Apple & Onion Jam.

Editor's Choice: Organic Valley American Cheese
Have I told you how much I love cheese? I feel like I must have mentioned it before. All cheese. I love the stinky blues that clear out the sinuses. I like a sharp sharp cheddar that bites you back. I like a creamy Port Salut. I love it all. Even American, the red-headed step child of the cheese world. But those processed cheese slices leave something to be desired. No longer must I struggle with this! Organic Valley, the nation’s largest cooperative of organic farmers and a leading organic brand, has launched a new flavor: Organic Valley American Cheese Singles—unprocessed, 100 percent real organic cheese slices, as opposed to “processed cheese food,” perfect for grilled cheese sandwiches, lunches and snacks. Organic Valley is the only national brand to produce unprocessed, organic American Cheese Singles.
I am in love.
I found out this weekend that my nephews loathe the processed cheese that they are fed when they go to their friend's houses for lunch (along with the processed bread, fruit leather and sugar cereals. I am sure this does not endear them to the parent's of their friends but, what are you going to do? the kids know good food.) My nephew Max in particular, will point out to whatever adult is feeding him, "This isn't cheddar", or, "This is mild cheddar. I like sharp cheddar." The kid knows his cheese. I feel as though he would approve of the Organic Valley American Cheese, which is creamy and rich and tastes like a cheddar/colby mix.
The beauty of American Cheese in general is it's gooey meltiness and how it is part of many kinds of American comfort foods. When I was a kid we put it on green beans, broccoli, Sloppy Joes, grilled cheese, burgers and hot dogs...basically anything that would stand still long enough to cover it in cheese. This is all that melty goodness without the processed flavor or bad-for-you chemicals. All the calcium and goodness with more flavor. Keep it coming, Organic Valley! Our love affair will last an eternity.
